Superpoints (otherwise known as free money)



I know it's been a while. We've been introducing foods back into the Bug's diet, to see how he does (more on that later), so I've been really concentrating on that. I'll be back to posting again next week, and boy do I have a lot to post!

However.

I wanted to take a quick second to tell you about Superpoints, if you haven't already heard of it.

Do you use Swagbucks? If so, then you've already figured out how awesome it is to get free Amazon.com gift cards, among many other things, for free just for searching the internet using the swagbucks search engine, right? (If you haven't already signed up for Swagbucks, you can do so HERE)


Well, Superpoints is similar to Swagbucks in that you earn points that you can then trade in for things like Amazon.com gift cards (again... among many other things; that just happens to be my favorite). With Superpoints you earn points by referring your friends, watching videos, taking surveys, clicking on the Super Lucky Button, and other things. It's super easy, and the points accumulate pretty quickly. I just signed up a few days ago, and I already have almost enough points to get my first Amazon gift card.

New Ortega $1/2 Coupon





Ortega has a new coupon on their website for $1.00 off of any two Ortega products. I love these coupons, because you can get super cheap black beans and green chiles. For example, my Super Target has the Ortega canned black beans for $.69, which makes them $.19 each with the coupon. You can print the coupon twice. Just click the image above, to print. Olé!

Get a Free Sample or a $1 Coupon for Purex Complete with Zout





Right now you can sign up on the Purex Website to get a free sample of their new Purex Complete with Zout, and they'll give you the option of having the sample sent to you, or allowing you to print a coupon for $1.00 off.

They have a Free and Clear variety, but I doubt that is what the sample would be for, so I chose to print out the coupon (it's a coupons.com coupon, so you can print it twice). We have to use Free and Clear detergents, or Noah's skin gets super angry at us, so this way I can be sure that's what we're getting. Plus, Purex goes on sale all the time, so this coupon will make for a really great deal!

Disney Parks

Every year Disney releases a planning DVD, and every year I order one. They send it to you for free, and it contains updated information about their parks, events and promotions that are going on that year, information on how to make the most of your Disney vacation, and more. I grew up going to Disneyland, and it's a major part of my childhood memories, so part of the reason I get the DVD every year is for nostalgia. The other reason is that I'm told this is one way to get on their mailing list, so you have a chance to get special deals and offers from Disney in your mail box. Anything that can help me save money on our next Disneyland trip (hopefully next spring!) is awesome.

the Best Potato Salad You'll Ever Have



That's not an exaggeration, either. It's delicious. It is in no way healthy, but I'll say it again... it's delicious.  I'm kind of a potato salad snob, I guess. I can't stand the stuff from the store, and it's rare that I like someone else' recipe. Try mine. I think you'll like it. It's been in my family for years. My Grandparents made it, my Mom made it, I make it. It's not something I make a lot, because it's a bowl full of carbs and fat (two things that generally should not be hanging out together), but every once in a while I make a big bowl and it serves for dinner and lunch the next day. It's perfect for summer nights when you want something nice and cold for dinner. Plus, it's gluten and casein free. Bonus!

Before I post it, I should mention that I'm kind of a "little of this, little of that" kind of cook usually, so this is not an exact recipe, and can certainly be played with to suit your personal taste.

the Best Potato Salad You'll Ever Have


  • 6-8 medium sized potatoes
  • 6-8 large eggs (I use the same amount of eggs as I use potatoes)
  • Mayo
  • lemon juice or apple cider vinegar (just a splash)
  • Generous amount of Onions, chopped or onion powder (I prefer the powder)
  • 1 green bell pepper, chopped
  • Pickles, chopped (as many as your heart desires)
  • 1 medium carrot, shredded
  • 1 rib of celery, chopped
  • additional add ins (sometimes I throw in some chopped olives, or I cook some bacon and crumble it on my husband's serving, since I don't eat meat)
  • Salt and pepper to taste


You can cook the potatoes one of two ways. Sometimes I scrub them, and throw them in the pot whole, with the skin still on, and boil them until they're tender. Then just let them cool, roll them in between your hands, and the skin will peel off. You can then chop them up. Other times I peel them, dice them, and boil them until they're tender. The first way gives you diced potatoes that hold their shape well in the salad. The second way, gives you mushier potatoes, and you'll lose some of them as you stir the salad together, as they get smooshed up and combined with the egg and mayo mixture. Both ways are good.

While your potatoes are cooking, boil your eggs. Be sure to add salt to the water, and run them under cold water (I even throw some ice cubes on top of them) when they're done. They'll peel much easier if you do that.

In a large bowl, use a potato masher or the back of a fork to mash up the cooked, cooled, and peeled eggs. Add enough mayo to make the consistency of egg salad, and then add a bit more. Splash your lemon juice or apple cider vinegar into the egg mixture and stir it up. You should now have what looks like slightly watery egg salad.

Add your onion powder (or chopped onions), bell pepper, carrot, celery, and anything else you're throwing in there. Mix it up. Add your diced potatoes, and stir it up well.

Add some salt and pepper. Taste it. Add more salt, if needed, until it tastes just right.

Refrigerate for at least an hour, more if possible. The colder the better, and the longer it sits, the better the flavors blend together.
